Ingredients

  • 1- Package Hurst's® 15 Bean Soup
  • 1 lb. ham, ham hocks, or smoked sausage
  • 1 cup onion, chopped
  • 1 15 oz. can diced or stewed tomatoes
  • 1 tsp. chili powder
  • Juice from 1 lemon
  • 1-2 cloves minced garlic

  1. Traditional Method:
  2. Soaking- Place beans in a large pot, cover with 2 quarts of water. Allow beans to soak overnight, or at least 8 hours.
  3. After soaking, drain excess water, and add 2 quarts of fresh water and meat.
  4. Bring to a rolling boil, reduce the heat and simmer uncovered for 2.5 hours.
  5. After simmering, add onion, tomatoes, chili powder, lemon and garlic. Simmer for an additional 30 minutes.
  6. Add contents of ham packet 1 to 2 minutes before cooking is completed. Salt and pepper to taste.

As my title states, I add all sorts of things; baby carrots, bell pepper, spinach, Hatch green chiles, celery (tops included).The ham bone is a MUST. I TRY to freeze a few pints, but it is usually GONE quickly. As with most soups like this, I find it tastes even better the next day. Hurst has the best bean products, by far. I just wish I could find them all! Really looking forward to trying the Red Curry Lentils!

Works In The Pressure Cooker Too!BeanBeanBeanBeanBean

This is a great soup that can be made in the pressure cooker too. I cook at a fairly low pressure for about 40 minutes. You can't beat it over corn bread!
