The original "off the bag" recipe for Hurst's Vegetarian 15 Bean Soup. It features our delicious herb and spice blend. Enjoy!

Ingredients

  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup carrots, diced
  • 2 tablespoons of olive oil
  • 1 15 oz. can, diced or stewed tomatoes
  • 1 tsp. chili powder
  • Juice of 1 lemon
  • 1-2 cloves garlic, minced

Cooking Directions ( reviews )

  1. Soaking: Place beans in a large pot, cover with 2 quarts of water. Allow Beans to soak overnight, or at least 8 hours.
  2. After soaking, drain water, add 2 quarts of water. Bring beans to boil, reduce heat and simmer uncovered for 2 ½ hours.
  3. Sauté onion, celery, and carrots in olive oil approximately 10 minutes.
  4. Add sautéed vegetables, tomatoes, and vegetarian seasoning packet to the beans.
  5. Cover and simmer another 30 minutes. Salt and pepper to taste.
